Ingredients for dhokla 


For the better 

* 1 cup besan ( gram flour)

* 1 teaspoon semolina ( optional for texture)

*1 Teaspoon Ginger - green chilli paste 

* 1 teaspoon lemon juice,1 teaspoon sugar 

* 1/2 teaspoon turmeric powder 

*1 Teaspoon eno fruit Salt ( Baking soda)

*3/4 cup water ( adjust as needed)


For tempering 


*2 teaspoon oil 
*1 teaspoon mustard seeds sesame 
*green chilli, Salt,8-10 curry leaves 
*1/4 cup water 
*1 teaspoon sugar 


Garnish 

Fresh Coriander leaves ( chopped)
Freshly great coconut ( optional)


Step - by - step:- how to make dhokla 


Prepare the better 


In a large mixing bowl combine besan semolina , ginger , chili paste, turmeric,lemon juice,suger and salt , gradually add water to form a smooth better without lumps .

Add the rising agent


Right before steaming add ENO fruit Salt and mix you"ll notice the better becomes airy and light this is the second to spongy dhokla 

Steam the dhokla 


- grease a dhokla plate or cake tin.
- pour the better into the tin and steam for about 15- 20 minutes on medium flame.
- check doneness by inserting a toothpick - it should come aur clean.

Prepare tempering 


In a small pan ,heat oil add mustard seeds sesame seeds green chillies and curry leaves let them splultes add water over the steamed dhokla.

Cuts garnish


Let the dhokla cool for a few minutes then cut into squares or diamond shapes garnish it will wait chopped coriander and grated coconut.


Tips for perfect dhokla everytime.


. Use fresh ENO or baking soda for maximum flutfiness
. Steam immediately after adding ENO
. Don't overmix the batter after adding the rising agent 
. Adjust water to get a thick but pourable consistency
