Ingredients For the spinach puree: 2 bunches (400g) spinach (palak), washed and chopped 2 cups water 1 green chili 1 tsp oil 1/2 tsp salt Ice-cold water (for blanching) For the gravy : 200g paneer (cubed) 2 tbsp ghee or oil 1 tsp cumin seeds 1 onion (finely chopped) 1 tbsp ginger-garlic paste 1 large tomato (pureed) 1/2 tsp turmeric powder 1 tsp red chili powder 1/2 tsp garam masala 1/2 tsp coriander powder 1/2 cup fresh cream or 2 tbsp butter (optional) Salt to taste Instructions Step 1: Blanch the spinach Boil 2 cups of water in a pan. Add a pinch of salt and a teaspoon of oil. Add the chopped spinach and green chili. Cook for 2 minutes until the spinach wilts.
