Ingredients
For the spinach puree:
- 2 bunches (400g) spinach (palak), washed and chopped
- 2 cups water
- 1 green chili
- 1 tsp oil
- 1/2 tsp salt
- Ice-cold water (for blanching)
For the gravy:
- 200g paneer (cubed)
- 2 tbsp ghee or oil
- 1 tsp cumin seeds
- 1 onion (finely chopped)
- 1 tbsp ginger-garlic paste
- 1 large tomato (pureed)
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 tsp garam masala
- 1/2 tsp coriander powder
- 1/2 cup fresh cream or 2 tbsp butter (optional)
- Salt to taste
Instructions
Step 1: Blanch the spinach
- Boil 2 cups of water in a pan. Add a pinch of salt and a teaspoon of oil.
- Add the chopped spinach and green chili. Cook for 2 minutes until the spinach wilts.
- Immediately transfer the spinach to a bowl of ice-cold water (this helps retain the green color).
- Blend the spinach and green chili into a smooth puree. Set aside.
Step 2: Prepare the gravy
- Heat ghee or oil in a pan. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté until fragrant.
- Pour in the tomato puree and cook until the oil separates.
- Add turmeric, red chili powder, garam masala, coriander powder, and salt. Mix well.
Step 3: Combine spinach puree and paneer
- Lower the heat and add the spinach puree. Stir well and let it simmer for 3-4 minutes.
- Add paneer cubes and cook for another 3-4 minutes.
- (Optional) Stir in fresh cream or butter for a rich, creamy texture.
- Taste and adjust salt or spices as needed.
Serving Suggestions
- Serve hot with naan, roti, or jeera rice.
- Garnish with fresh cream or a dollop of butter.
