Ingredients

1 tablespoon nighala seeds (kalonji)

1 tablespoon fenugreek seeds (methi)

1 tablespoon red chili powder

1 teaspoon asafoetida (hing)

1/2 cup mustard oil

2 tablespoons vinegar (optional, for longer shelf life)



Step-by-Step Instructions


Step 1: Prepare the Mangoes

Wash the raw mangoes thoroughly and dry them completely. Cut them into small pieces, removing the seed. Mix them with salt and turmeric powder, then spread them on a tray. Let them sun-dry for 4-5 hours to remove excess moisture.


Step 2: Prepare the Spice Mix

In a dry pan, lightly roast mustard seeds, fennel seeds, nigala seeds, and fenugreek seeds for a few seconds. Grind them coarsely using a mortar and pestle or spice grinder.


Step 3: Mix the Spices with Mangoes

In a large mixing bowl, combine the dried mango pieces with the roasted spice mix, red chili powder, and asafoetida. Mix well to coat the mangoes evenly.


Step 4: Heat the Mustard Oil

Heat mustard oil in a pan until it reaches a smoking point, then let it cool slightly. Pour the warm oil over the mango-spice mixture and mix well. Add vinegar at this stage if you want to extend the shelf life.
